Nana Schniekies

I've decided to share a recipe with y'all that comes from my Eastern European heritage!  It's called Nana Schniekies or Nala Shiekies or something like that and it is a Lithuanian dish (I think) or it could be Polish or Ukranian.  Anyway, it's Eastern European at any rate and it's really good!  Basically, it's like French Crêpes but we don't bastardize it by putting sugar in it like those decadent French!  By the way, in my country, Crêpes means pancakes.  But, pancakes, this is not!  I hate pancakes.  But this is actually good and simple enough to make and I wanted to prove that I know how to cook.  You'll love it!

Ingredients:
  • 375 mL (a cup and heif) Milk
  • 250 mL (a cup) Flour
  • 3 eggs
  • Butter or Margarine
  • Optional: Cheese, Spinach, lemon, Jam, Syrup, Asparagus
Tools:
  • Soap
  • Pan
  • Spatula
  • Fork or mixing thing
  • Ladel
  • Optional: Cheese grater, Strainer

Directions (or as my dad calls them: constructions):
  1. WASH YOUR HANDS (with soap)!
  2. Fetch the flour.  Put it into a large bowl.  Note: It is best that you follow the directions in the order that I present.  I have learned this from experience.
  3. Pour the milk into the measuring cup.  Note: If you did this before step 2, you would have had to wash the measuring cup in between.  (An extra step for nothing!)
  4. Crack the eggs into the measuring cup.  Mix.  (Mixing it in the measuring cup is fine.)  Note: If you did this before step 3, you would have a hard time measuring the milk.
  5. Pour the liquid stuff in the bowl with the flour.  Mix.
  6. Put butter/margarine on the pan.  Put it to the highest setting and melt it.  Pour the melted butter or margarine into the bowl and mix.
  7. Lower the heat on the pan to medium high (About 70-75%)
  8. Use ladel to scoop batter onto the pan.  Swish it around a bit so it covers the pan.  Use spatula to flip when ready.  Cook both sides.
  9. If you want, you can add grated cheese alone or with spinach (with lemon - it's healthier for you) or asparagus.  If you chose to go this route, grate the cheese and add whatever else you want, roll it up then heat it in the oven or microwave to melt the cheese.
  10. EAT IT!
The basic recipe should make about 6 medium sized Nana Schniekies.  You can use more or less ingredients to make more or less depending on how many people are eating and the size of their appetites.  Just remember to keep everything in proportion!  A good rule of thumb is three eggs per two people for a decent sized meal.

Bon Appétit!
